Oak aging often adds complementary notes of vanilla, cedar, and spice, while extended skin contact enhances its structure and longevity. Warmer climates embolden this wine. Lodi’s consistent sunshine and dry growing conditions allow Cabernet grapes to ripen fully, producing wines with concentrated fruit, smooth tannins, and often a generous dose of oak influence. Personal Review
Opening a bottle of Slow Press Cabernet Sauvignon 2021 from Lodi was satisfying. The nose was rich and dark—blackberry, plum, and typical black cherry, with a noticeable layer of toasted oak and vanilla. There was also a hint of chocolate and spice that gave the aroma a cozy, almost dessert-like warmth.
Tasting it, the wine was full-bodied and plush, but not overly heavy. The dark fruit carried through strongly—especially blackberry and ripe plum—balanced by soft tannins and a touch of mocha on the mid-palate. The oak aging was definitely present, adding a velvety texture and notes of baking spice without feeling overly smoky or aggressive. It felt polished and very approachable, with just enough structure to hold up without being too bold or drying. It was distinguishable from the last Cali Cab I had still!
The finish was smooth and lingering, with subtle echoes of dark fruit and cocoa. Overall, Slow Press felt like a mellow, fruit-forward Cabernet with classic Cali richness. It’s not overly complex, but it’s well-balanced and comforting—something I’d reach for when I want a no-fuss red that still feels full and expressive.
